Double Boiling is a popular Chinese cooking technique. The food is covered with water, put into a covered ceramic jar and steamed for several hours. This ensures that all nutrients are retained and preserved in the food being cooked. It’s one of those set it and forget it comfort food.

This ‘Double Boiled Papaya with Chinese Almonds” is easy to make dessert with great health benefits! Chinese believe that this dessert “moisturizes” one from the inside out, improves one’s constitution and makes one’s complexion smooth and radiant.

How to make:

  • Rinse the oysters thoroughly to get any gritty bits out.
  • Put the halved papaya into a ceramic jar. Stuff the dates and the almonds into the cavity of the fruit.
  • Bring the cup of water to a boil and pour over the stuffed papaya. Cover the ceramic jar with heavy duty foil or a tight fitted lid.
  • Steam over a boiling pot of water for about 2-3 hours. Or until the papaya is tender and soft. (Be sure you put enough water in the pot for steaming, and check periodically to make sure it doesn’t run dry!)

 That’s it! Eat directly by spooning the flesh and the stuffing from the papaya. Hmmmm……
