Sweet potato has high nutritional value, containing a high level of carotene and rich in fiber, potassium, folic acid, vitamin C and so on. Many people would use sweet potato just to make sweet potato soup, but in fact, there are plenty of ways to cook sweet potato like the refreshing salad I am going to introduce today.

1 Sweet Potato (diced)
1 Apple (diced)
2 Red Cabbages (shredded)
1 tbsp. Pine Nuts
2 tbsp. Dry Raisins

1/2 tsp. Salt
4 tbsp. Vegan Salad Dressing
1 Lemon Juice
2 tbsp. Organic Coconut Shreds
Black Pepper
2 tbsp. Sugar


Step 1: Steam cook sweet potato and let it cool.

Step 2: Dice apple, put in a bowl and mix well with lemon juice.

Step 3:  Place all ingredients in a large bowl, add seasoning and mix well.

Step 4: Finally, add pine nuts and it is ready to be served.

Tip: It is best to eat this salad once it is done because the sweet potato will become hard and difficult to digest when it cools.
