- In a small saucepan, bring the chicken broth and the orange juice to a boil. Remove from heat.
- Put in the couscous. Stir to mix thoroughly. Cover with lid and let stand for 5 minutes.
- Fluff couscous with a fork, then add in the raisins, the orange rind and the almond flakes.
- Drizzle with olive oil.
- Done. Serve.
If you are planning to serve this with the <a Cumin Orange Roasted Chicken and happen to have the gizzards on hand, you can add further flavor to the dish by cutting up the gizzard and throwing them into the broth while boiling. Then continue to make the dish as per above.
